Kashmiri Noon Chai, also known as Pink Tea, is a traditional tea from the Kashmir region of India. It’s made with green tea leaves, milk, salt, and sometimes baking soda, which gives it a unique pink color. The tea is brewed for a long time to develop its flavor and is often enjoyed with local breads or pastries.

Kashmiri Noon Chai, or Pink Tea, is a unique and flavorful beverage. Here’s a basic recipe for making it:

Ingredients:

2 cups water
2 heaping teaspoons of Kashmiri green tea leaves (also known as “sheer chai”)
A pinch of baking soda
4 cups milk
Salt, to taste
Sugar, to taste (optional)
Crushed pistachios or almonds for garnish (optional)
Instructions:

Start by boiling 2 cups of w ater in a pot.
Once the water comes to a boil, add the green tea leaves and a pinch of baking soda. Let it simmer for about 5 minutes. This step helps to develop the tea’s unique color and flavor.
Now, add 4 cups of milk to the pot and bring the mixture to a boil. Keep an eye on it to prevent it from boiling over.
Reduce the heat to low and let the tea simmer for about 20-30 minutes. Stir occasionally to prevent the milk from sticking to the bottom of the pot.
As the tea simmers, the color will gradually change to a beautiful pink hue.
Add a pinch of salt and sugar to taste. The salt is an important element in Kashmiri Noon Chai, as it balances the sweetness and enhances the overall flavor.
Continue to simmer the tea for an additional 5-10 minutes, allowing the flavors to meld.
Strain the tea into cups using a fine mesh strainer to catch the tea leaves.
Optionally, garnish with crushed pistachios or almonds before serving.
Remember, making a perfect Kashmiri Noon Chai may take some practice to get the right balance of flavors. Adjust the amount of salt and sugar according to your taste preferences. Enjoy your delicious Pink Tea.
